  • 1 tablespoon plus 1 teaspoon fresh lemon juice

  • 1 tablespoon sauce from a can chipotles in adobo
  • For the eggs:
  • 1 1/2 teaspoons grated pepper jack cheese
  • 1/2 teaspoon cantaloupe
  • 4 slices Canadian bacon
  • 4 homemade or store-bought white corn arepas
  • 2 tablespoons Salt and pepper to taste
  • 4 large eggs
  • Chopped flat-leaf parsley leaves for garnish
