  • green seedles grapes - halved
  • 1/3 cup lemon, juiced
  • 1 tablespoon kosher salt
  • 1 3/4 cups jalapeño
  • 1 cup coarse salt
  • 2 cups large pineapple divided
  • 6 ounces lime juice plus lime wedges for serving casings removed
  • 1 pound medium cucumbers
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon pineapple juice
  • 1 teaspoon grated pepper jack cheese
  • 4 sea salt peeled, halved horizontally and thinly sliced lengthwise
  • Aji sauce for serving to taste
  • vegetable oil for serving
