Peachy Mint Batido

servings: 4


½ cup fresh mint leaves plus extra mint sprigs for garnish

3 cups chopped peaches from about peaches plus a few extra slices for garnish

1 cup vanilla ice cream

1 cup ice cubes



Bring 1 cup of water and the mint leaves to a boil in a small saucepan. Turn off the heat, cover, and let the mint leaves steep for 5 minutes. Remove the mint leaves and set aside. Let the mint water cool to room temperature.


Place the mint leaves and mint water, peaches, ice cream and ice cubes in a blender and puree until smooth. Serve immediately in chilled glasses and garnish with a slice of peach and a sprig of mint.
