Healthy Sweet Potato Casserole


3 tbs butter

3 cups frozen cauliflower rice

½ cup milk

1/3 cup Greek yogurt

3 cups freshly mashed sweet potato

A dash of nutmeg or allspice

Salt & Pepper to taste

½ cup chopped walnuts

1 tbs brown sugar

1 tbs maple syrup

2/3 cup mini marshmallows

Pre-heat the oven to 375F
In a sauté pan, over medium-high heat, melt the butter. Add the frozen cauliflower and cook for about 10 minutes, until soft.
Carefully transfer the cauliflower to a blender. Add the milk and yogurt and blend until smooth. Transfer to a bowl and mix with the sweet potato mash, nutmeg, salt and pepper. Spray and 8x8 baking dish with cooking spray and add the sweet potato mixture, spreading evenly.
In a small bowl, coat the walnuts with the brown sugar and syrup. Sprinkle sparingly over the baking dish. Top with the marshmallows, also sparingly.
Bake for 20 minutes, until the marshmallows are golden brown and the mash is heated through.
